This WordPress plugin allows customer to select fixed date range.
Sold out dates become not available for selection.

You can use specify fixed price for number of days or custom price for some period.
It is possible to specify maximum number of orders (In Stock) per product.
You can disable holidays and weekends.
The same calendar can be used for multiple products.
All ordered dates can be viewed on edit product page in WordPress dashboard.
Selected date range by customer is saved in product text field custom option. So it is visible on order info page and in order confirmation emails.
